Thank you for the detailed information.

The solution here was apparently to edit the ini and disable SNMPv3 caching

[Misc]
snmpv3UseCache=0
WriteTest=1
PerfWorkMode2=0
CheckInternetConnection=1

I have noticed that the datastores are read out correctly via another ESX host... for whatever reason...
We'll keep an eye on it for now and I'll get back to you if necessary.
