We've found that we need to update our Ping test settings (values for failures, amount of attempts and such).

Doing this one by one is going to take a very long time so we are wondering if there is a way to do a mass update? When we select multiple Ping tests, not all values are able to be updated in mass.

Anyone have an idea on how to do this? or are we stuck doing updates one by one?

You may use Export/Import options:
1. Export all test items using Menu File -> Export to text file
2. Modify test settings using notepad
3. Add ImportMode = Modify option at the beginning of the file
4. Import modified text file using menu File -> Import from Text file.

Another option - HM Script
You may use SetTestParam or ReplaceTestParam commands
