Is there anyway to use HostMonitor to monitor CPU temperature? If so how do I set it up?

Usually servers provide such information using SNMP protocol.
If you hardware comes with appropriate SNMP agent, use SNMP Get test method. http://www.ks-soft.net/hostmon.eng/mframe.htm#tests.htm#chkSNMP

Also you may use WMI test and query like "Select Status from Win32_TemperatureProbe" http://www.ks-soft.net/hostmon.eng/mframe.htm#tests.htm#wmi
